Recipe: Green Olive Relish

This is basically a lazy green tapenade in a very small amount. With broiled or grilled salmon, green olive tapenade would probably be quite tasty, as well. Tough to make is not how anyone would describe this stuff. I use the same "recipe" when making a grilled cheese sandwich with mahon cheese and prosciutto on crusty bread. I put this stuff next to the cheese, and as the cheese melts, it ends up mixing nicely.

1 clove garlic, minced

juice of 1/2 to 1 lemon (taste for balance as you add)

olive oil

zest of 1 lemon

12-20 green olives, pitted and chopped

Mix ingredients together. Ta-da.
